Foretaste
The caravan, smoked southern fishes, as a Nordic caravan, bottarga, Krystal caviar and crispy morsels
Lucie Passedat sea bass
The corolla, fish of the daily catch partly cooked in salt and matured. Softly watered with a dried tuna broth
Anemone, with caviar in each three services, breaded, in custard and in light fritters.
Sea garden with Dublin Bay prawn and a consommé of garum.
A new version inspired by Paul Bocuse’s famous VGE soup
