This beautiful knife serves a precise purpose: to detach and separate the particularly delicate flesh of fish as if you were cutting meat. With its bolster-less handle and fluid blade, this knife is extremely functional.
The width of the “flank” is 5 mm more than that of a standard Laguiole knife to allow the blade to be used as a spatula. The knife, including the handle and blade, measures 23.5 cm – longer than normal to make it easier to handle. At the top of the blunt side of the knife, a small hole recalls the pupil of the fish.
