Oregano


Oregano, to my mind, goes only with tomato or prawns… this loyal and dry herb doesn’t make friends easily but is generous with the few it has. Try it in a consommé of grey shrimp (or in a shellfish nage as shrimp are growing rare) in which you infuse a pinch of oregano. As for tomatoes, let them cook slowly with an oregano crust !
